Ingredients & Substitutions

  • Butter: Creates richness and helps form the roux. You can replace part of it with oil, but butter gives the best flavor.
  • Onion: Adds sweetness and depth. Yellow or white onion works. Red onion will give a sharper bite.
  • Garlic & Ginger: Essential in Indian-inspired dishes. Fresh is best, but paste or frozen cubes work well too.
  • Flour: Helps thicken the sauce. Substitute with gluten-free flour if needed.
  • Garam Masala, Curry Powder & Paprika: These are the heart of the flavor. You can also use tikka masala spice, madras curry powder, or add chili powder for heat.
  • Coconut Milk: This is what makes this curry mac and cheese recipe extra creamy with a subtle curry sweetness. You can absolutely use cow’s milk instead, whole milk or even evaporated milk both work perfectly.
  • Cheddar Cheese: Sharp cheddar gives the best flavor. You can use mild cheddar, white cheddar, or a blend.
  • Mozzarella Cheese: Adds stretchiness and gooey texture. Substitute with Monterey Jack or Gouda.
  • Parmesan: Adds a salty, umami finish. Pecorino Romano is a great alternative.
  • Pasta: Elbow macaroni is classic, but any short pasta works: shells, fusilli, penne, cavatappi.

Chopped onions are browned and caramelized in a pan, with bits sticking to the bottom and a light coating of oil.
Bloom the flavors – don’t skip this step!

Optional Variations & Dietary Adaptations

  • Spicy Curry Mac and Cheese: Add cayenne, chili flakes, or chopped green chili.
  • Protein-Boosted: Stir in cooked chicken, shrimp, crispy tofu, chickpeas, or paneer.
  • Veggie-Loaded: Add spinach, peas, roasted cauliflower, mushrooms, or bell peppers.
  • Gluten-Free: Use gluten-free pasta + gluten-free flour for the roux.
  • Dairy-Free: Use vegan cheese and plant-based butter — works well with coconut milk.
  • Indian Curry Twist: Add a spoonful of tikka masala paste or butter chicken sauce for a deeper curry flavor.

Expert Tips

  • Sauté the onions until golden: This step builds sweetness and depth. Don’t rush it.
  • Bloom the spices: Cooking garam masala, curry powder, and paprika in butter wakes up the flavors. Just 1 minute makes a huge difference.
  • Whisk the coconut milk slowly: Pour it in gradually to avoid lumps and get a silky smooth sauce.
  • Use freshly grated cheese: It melts better and gives the sauce the creamiest texture. Pre-shredded cheese contains anti-caking agents that make mac and cheese grainy.
  • Don’t overcook the pasta: Cook it 1–2 minutes less than the package instructions, it will finish cooking in the oven.
  • Stovetop Version (No Bake): Skip the baking step and simply cook the pasta in the sauce until thick and creamy. Similar to my popular 3-ingredient one-pot mac and cheese. Add extra cheese to serve.
  • Bake until bubbly and golden: That final layer of cheese on top gives you the perfect crispy-cheesy crust.

How to Serve Curry Mac and Cheese

Curry mac and cheese is a cozy, crowd-pleasing dish that works for weeknight dinners, potlucks, Thanksgiving, Christmas and other holidays. It’s great on its own, but even better with the right sides.

Curried mac and cheese pairs beautifully with simple sides like a fresh green salad, cucumber salad, or roasted vegetables. It’s also amazing with warm garlic naan and a little brightness from pickled onions or mango chutney takes it to the next level.

For a bigger spread, serve it alongside reader favorites like my Chicken Curry, Lentil Curry, or Pistachio Crusted Salmon. These dishes balance the creamy, bold flavors and turn your meal into a full, comforting feast.

What to Do With Extra Curry Powder & Garam Masala

If you’ve got leftover curry powder or garam masala, here are a few delicious recipes on my blog:

How to Store Curry Mac and Cheese

  • Fridge: Store in an airtight container for 3–4 days.
  • Reheat: Add a splash of milk or water, then warm in the oven or microwave until creamy.
  • Freezer: Not recommended, melted cheese + coconut milk can separate.
  • Meal Prep Tip: Bake in individual ramekins for quick grab-and-reheat portions.

Notes

  • Milk Options: In this curry mac and cheese recipe I use coconut milk to enhance the curry, ginger, and garam masala flavors, it makes the sauce extra rich and aromatic.
If you prefer a more traditional taste, you can substitute coconut milk with whole cow’s milk or evaporated milk.
  • Cheese Options: The cheddar–mozzarella blend gives you both sharp flavor and gooey stretch, but many cheeses work here, such as: Gruyère, Monterey Jack, Pepper Jack.
  • Make it spicier: add chili powder, cayenne, or chopped green chili.
  • Add-Ins & Variations:
    • Protein: shredded chicken, cooked shrimp, crispy chickpeas.
    • Veggies: peas, spinach, roasted cauliflower, red pepper, mushrooms.
    • Indian-inspired: add a little turmeric or a spoon of tikka masala paste.
    • Breadcrumb topping: combine panko, melted butter, and a pinch of curry powder; sprinkle on top before baking.
  • Stovetop Version (No Bake): Skip the baking step and simply cook the pasta in the sauce until thick and creamy. Add extra cheese to serve.
  • Make Ahead: Assemble completely (without baking), cover tightly, and refrigerate for up to 24 hours. Bake just before serving.
