These coconut cookies are probably the easiest cookies I’ve ever made! All you need is 2 ingredients and 5 minutes of work. If you like coconut and you like crispy cookies, you will love these cookies.

Ingredients
 

  • 1 cup 90g Desiccated coconut
  • 4 tablespoons Maple syrup

Instructions
 

  • DIRECTIONS
    1. Preheat oven to 350F (180C), grease a muffin tray and set aside.
    2. In a large bowl mix desiccated coconut and maple syrup. Mix until well combined.
    3. Spoon about 1 tablespoon of the mixture into the bottom of the muffin try. Lightly press to flatten the mixture.
    4. Bake for 8-10 minutes or until golden. Allow to cool, then release from the pan.

    I made them with honey and man o man they are delicious

    1. Yes, you can send these cookies by mail since they’re made with shelf-stable ingredients, but keep in mind they’re delicate and may crumble a bit during transit. Let them cool completely, pack tightly in a sturdy container with parchment between layers, and avoid shipping in very hot weather. They stay fresh for about 5–7 days.

    1. The desiccated coconut used in the 2-ingredient coconut cookies is unsweetened. Using sweetened coconut would make the cookies too sugary since maple syrup is already added.
