How to Make Granola Cookies
Making healthy granola cookies is easier than you think! Here are the steps:
1. Mix the Ingredients: Combine rolled oats, dried fruits, nuts, seeds, and a touch of salt with coconut oil and maple syrup in a bowl.
2. Shape the Cookies: Use a cookie cutter or spoon the mixture onto a tray. Press to shape evenly.
3. Bake: Pop the cookies into a preheated oven until they turn golden and crisp. To prevent them from spreading cover with aluminum cups or bake them in a muffin tin.
4. Cool and Enjoy: Let the cookies cool completely to hold their shape and maximize flavor.
Tips to Make Healthy Granola Cookies
- Bind it well: Use enough coconut oil and maple syrup to keep the mixture cohesive. Dry batter can cause crumbling.
- Prevent spreading: Use aluminum muffin cups to keep the cookies’ shape intact while baking.
- Add variety: Swap cranberries for raisins, or include pecans for extra crunch.
- Keep an eye on baking: Every oven is different. Check your cookies at the 20-minute mark to avoid overbaking.
- Customize flavors: Mix in cinnamon, vanilla, or even a dash of olive oil for a twist on classic granola cookies.
Variations and Substitutions
- Vegan granola cookies: Swap honey for maple syrup or agave nectar.
- Gluten-free granola cookies: Ensure your rolled oats are certified gluten-free.
- Nut options: Replace almonds and walnuts with cashews, pecans, or hazelnuts.
- Seed options: Use flaxseeds or sesame seeds in place of chia seeds.
- Sweetener substitutes: Replace maple syrup with honey, agave, or date syrup.
- Oil alternatives: Use olive oil or avocado oil instead of coconut oil for a different flavor profile.
- Extra add-ins: Try shredded coconut, dried apricots, or dark chocolate chunks to mix things up.
Troubleshooting 🚫
- Why are my granola cookies crumbling? This can happen if the mixture isn’t mixed well or doesn’t have enough binding ingredients like coconut oil or maple syrup. Also, let the cookies cool completely before handling—they’ll firm up as they cool. Keep in mind, these cookies are meant to be slightly delicate and not as solid as store-bought granola bars.
- Why are my cookies spreading while baking? This is usually due to loose shaping. To avoid this, use a muffin tin, ramekins, or aluminum cups as shown in the video to hold the shape while baking. These tools ensure the cookies stay compact and prevent spreading.
How to Store
Store your healthy granola cookies in an airtight container at room temperature for up to one week. For longer storage, freeze them for up to three months. Just thaw and enjoy whenever you need a healthy snack!
