If you like granola, why don't make cookies from it? These granola cookies are healthy, delicious and easy to make. The only problem with them, is they are addictive, so be careful!
Preheat oven to 350F (180C). Line a baking tray with parchment paper and set aside.
Place all ingredients in a mixing bowl and mix until well combined.
Using a cookie cutter or a small cake ring shape the cookies: place the ring on the tray, then spoon into the ring 2-3 tablespoons of the granola mixture. Press the mixture with the back of the spoon.
Bake for 20-25 minutes or until golden. Note: keep an eye while baking, the baking time may change from oven to oven.
Note 2: With this method, the cookies may spread, so you can use the following method:
Other way to shape the cookies: spoon 2-3 tablespoons of the granola mixture on the baking tray, then cover the batter with aluminum muffin cups or any other tool. This will help prevent the cookies from spreading. Note: bake for 20-25 minutes, until golden. At the last 5 minutes, remove muffin cups and keep baking until golden.
Let cool completely.
