🛒 Ingredients for Gluten-Free Bread
Sunflower Seeds, Sesame Seeds, and Nuts (Optional Toppings): These add a crunchy texture on top, making every bite even more delicious. You can mix and match your favorite seeds or nuts for extra flavor and crunch!
Raw Tahini: This is the star of the show! Tahini, made from sesame seeds, provides a rich, nutty flavor and acts as a substitute for flour, giving the bread structure and moisture.
Eggs: Eggs are essential for binding everything together and giving the bread that light, fluffy texture. They also help the bread rise and give it an airy feel.
Maple Syrup (optional): If you like a hint of sweetness, maple syrup is perfect for that. It adds a natural sweetness to balance the savory flavors. You can omit it for a keto-friendly version.
Olive Oil: Olive oil adds extra moisture and richness to the bread, making it soft and flavorful. It also gives it a smooth texture.
Baking Powder/Baking Soda: This is the magic ingredient that helps the bread rise, making it light and fluffy.
Salt: A little bit of salt enhances all the flavors, making the bread more flavorful.
What Is Tahini?
Tahini is a smooth, creamy paste made from ground sesame seeds. It has a rich, nutty flavor and is a staple in Middle Eastern and Mediterranean cuisines. Tahini is incredibly versatile and is used in both savory and sweet recipes.
How is Tahini Made?
Tahini is made by toasting sesame seeds (though some versions use raw seeds), then grinding them into a smooth, thick paste. The process extracts the oils from the seeds, creating a rich and creamy texture similar to nut butter.
How is Tahini Made?
In this flourless tahini bread recipe, tahini serves several key roles:
- Structure: Since this is a flourless recipe, tahini acts as the base that holds everything together, giving the bread structure and replacing the need for flour.
- Moisture: Tahini adds moisture to the bread, making it soft and tender without the need for dairy or flour.
- Flavor: It imparts a mild, nutty flavor that enhances the overall taste of the bread, giving it a unique, slightly savory taste that works well with both sweet and savory toppings.
- Nutrition: Tahini is rich in healthy fats, protein, and essential nutrients like calcium and iron, making this bread not only delicious but also nutritious.
Other Recipes You Can Make with Tahini
Tahini is incredibly versatile and can be used in a variety of recipes:
- Baba Ganoush: A delicious Middle Eastern dip made from roasted eggplant, tahini, olive oil, garlic, and lemon juice. It’s creamy, smoky, and perfect for dipping pita or veggies.
- Tahini Fudge: A sweet and rich treat made with tahini, giving it a nutty flavor and creamy texture. This no-bake dessert is often mixed with honey or maple syrup and a pinch of salt for a decadent, melt-in-your-mouth snack.
- Tahini Cookies: Tahini adds a rich, nutty flavor to cookies, similar to peanut butter cookies but with a unique sesame twist.
- Roasted Eggplant with Tahini Sauce: Roasted eggplant is topped with a creamy tahini sauce made by blending tahini with olive oil, lemon, and herbs. It’s a simple yet flavorful dish that makes for a great appetizer or side.
Tahini’s versatility and creamy texture make it a fantastic ingredient for both sweet and savory dishes!
🤌 How to Make Easy Keto Friendly Bread
Making this keto-friendly bread is super simple! Start by whisking your eggs until they’re light and fluffy. Then, mix in the tahini, olive oil, salt, and baking powder. For the keto version, just skip the maple syrup—it won’t change the texture or final result, so you’re all set!
Once your batter is ready, fold in your favorite toppings like seeds or nuts (if you like). Pour the batter into a lined loaf pan, sprinkle some extra seeds or nuts on top, and bake until golden and firm. That’s it! In no time, you’ll have a delicious, airy, flourless bread that’s keto-friendly and easy to make!
🪄 Tips and Tricks
- Whip the Eggs Well: Beat the eggs until they’re light and fluffy. This step is important to create that airy texture in the bread, so don’t rush it!
- Don’t Skip the Baking Powder: The baking powder (or baking soda) is what helps the bread rise. Without it, the bread may turn out too dense.
- Mix Toppings Into the Batter: Fold 3/4 of your seeds or nuts into the batter. This spreads the crunch throughout the bread, and not just on top.
- Use Parchment Paper: Lining your loaf pan with parchment paper makes removing the bread super easy and prevents sticking.
- Check for Doneness: After about 30 minutes, insert a toothpick into the center of the bread. If it comes out clean, your bread is ready!
- Let It Cool: This bread needs a little time to cool so it slices neatly. Resist the temptation to cut into it right away!
- Keto Tip: For the keto version, omitting the maple syrup won’t affect the texture, so go ahead and leave it out if you’re keeping it low-carb.
🗒 Variations
Cheesy Tahini Bread: Mix in shredded cheese like cheddar or parmesan for a savory, cheesy loaf that pairs well with soups or salads.
Herb & Garlic Bread: Add chopped fresh herbs like rosemary, thyme, or basil into the batter for a savory twist. You can also mix in some minced garlic for extra flavor.
Spiced Tahini Bread: For a warm, spiced version, try adding a pinch of cinnamon, nutmeg, or cumin to the batter. These spices will give the bread a unique flavor perfect for fall.
Nutty Tahini Bread: Mix in different types of nuts like chopped almonds, walnuts, or pecans. These add a nice crunch and extra nutrients.
Seeded Tahini Bread: Add more seeds like pumpkin seeds, flaxseeds, or chia seeds to the batter for a boost of fiber and a crunchy texture.
Sweet Tahini Bread: If you prefer a sweeter bread, keep the maple syrup and add a handful of dried fruit like cranberries, raisins, or chopped dates for bursts of sweetness.
Spicy Tahini Bread: Add a pinch of cayenne or red pepper flakes for a spicy kick. This variation is great with savory toppings like avocado or hummus.
🗒 Substitutions
- Tahini: You can substitute tahini with almond butter, cashew butter, or sunflower seed butter. These will still give the bread a similar texture but with a slightly different flavor profile.
- Maple Syrup: For a keto version, you can simply omit the maple syrup. Alternatively, you can replace it with sugar-free sweeteners like stevia or erythritol if you want a touch of sweetness without the carbs.
- Olive Oil: Swap olive oil with melted coconut oil, avocado oil, or any neutral oil of your choice. These will provide the same moisture and texture while slightly altering the flavor.
- Baking Powder/Baking Soda: If you’re out of baking powder, use 1/4 teaspoon of baking soda mixed with 1/2 teaspoon of cream of tartar as a substitute.
- Eggs: You can try using flax eggs (1 tablespoon ground flaxseed mixed with 3 tablespoons water per egg) as a substitute for eggs. However, I’ve never tested this substitution myself, so I can’t guarantee the result will be the same.
- Nuts/Seeds Toppings: Feel free to use any combination of seeds or nuts you prefer. Pumpkin seeds, chia seeds, or flaxseeds can be great alternatives to sunflower or sesame seeds.
- Salt: If you’re cutting back on sodium, you can reduce the salt or use a low-sodium salt alternative.
🗒 Gluten-Free Bread Best Served With
- Avocado & Sesame: Spread some mashed avocado on top and sprinkle with sesame seeds or chili flakes for a creamy, savory bite.
- Cheese & Veggies: Try topping a slice with your favorite cheese (goat cheese, feta, or cream cheese) and fresh cucumber or tomato slices for a refreshing and delicious combo.
- Hummus & Olives: Pair this bread with hummus and a handful of olives for a Mediterranean-inspired snack or light meal.
- Nut Butter & Honey: For a sweeter option, spread almond or peanut butter on the bread and drizzle with honey or a sugar-free syrup.
- Eggs & Herbs: Top with a poached or fried egg, and sprinkle with fresh herbs like parsley or cilantro. Perfect for breakfast or brunch!
- Smoked Salmon & Cream Cheese: For a more luxurious treat, spread some cream cheese and add a few slices of smoked salmon. Garnish with capers or dill for extra flavor.
- Sliced Meats: This bread pairs great with deli meats like turkey, ham, or roast beef, making it a tasty gluten-free sandwich option.

👝 How to Store Leftovers Tahini Bread
- At Room Temperature: You can store the bread in an airtight container or wrapped in foil at room temperature for up to 2-3 days. Make sure it’s completely cooled before wrapping to prevent moisture buildup.
- In the Fridge: If you want to keep it fresh for longer, store the bread in the refrigerator. Place it in an airtight container or wrap it tightly in plastic wrap, and it will last for up to 5 days.
- Freezing: For longer storage, you can freeze the bread. Slice it first, then wrap each slice in plastic wrap or parchment paper and place them in a freezer-safe bag or container. It will keep for up to 3 months in the freezer. When you’re ready to enjoy, simply thaw at room temperature or reheat in the oven.
These options make it easy to enjoy your flourless tahini bread whenever you like!
