Every flour acts differently; therefore, you’ll need a different amount of flour. My recommendation is to add your preferred flour gradually and mix until a cookie dough consistency is formed.
- Different Sweetener: Maple syrup is the best choice for a healthier sweetener, but you can also substitute it with honey, agave syrup, stevia, coconut sugar, or even regular sugar. You may need to adjust the amount if a different sweetener is used.
- Low Sugar: For a lower sugar version, you can decrease the amount of maple syrup, use stevia and also skip the chocolate chips.
- Dried Fruit: You can also substitute the chocolate chips with dried fruit like raisins, cranberries, or add extra protein with nuts like walnuts, almonds, or peanuts.

- 2½ cups + 1 tablespoon (260 g) Almond flour/ground almonds
- ¾ teaspoon Baking powder
- ¼ cup (40 g) Chocolate chips optional
- 1 teaspoon Vanilla extract optional
Instructions
- Preheat the oven to 350°F (180°C). Line a baking tray with parchment paper and set aside.
- In a blender or food processor, combine cottage cheese, egg, maple syrup, and vanilla extract (if using). Blend until smooth.
- Transfer the mixture to a bowl. Add almond flour and baking powder, then mix until a dough forms.
- Fold in the chocolate chips (optional) or any other mix-ins of your choice.
- Using an ice cream scoop, portion the dough onto the prepared baking tray. Slightly flatten each mound and top with extra chocolate chips (optional).
- Bake for 15-16 minutes, or until lightly golden.
