If you're looking for quick and easy high protein and gluten-free snacks, these Cottage Cheese Chocolate Chip Cookies are the perfect choice! You only need a handful of ingredients and less than 30 minutes to make a batch of these cookies.
Preheat the oven to 350°F (180°C). Line a baking tray with parchment paper and set aside.
In a blender or food processor, combine cottage cheese, egg, maple syrup, and vanilla extract (if using). Blend until smooth.
Transfer the mixture to a bowl. Add almond flour and baking powder, then mix until a dough forms.
Fold in the chocolate chips (optional) or any other mix-ins of your choice.
Using an ice cream scoop, portion the dough onto the prepared baking tray. Slightly flatten each mound and top with extra chocolate chips (optional).
Bake for 15-16 minutes, or until lightly golden.
Allow the cookies to cool on the tray for 5 minutes, then transfer them to a wire rack to cool completely.

Different Flour: Instead of using almond flour, you can try these cookies with oat flour, spelt flour, or gluten free 1:1 flour.
Different Sweetener: Maple syrup is the best choice for a healthier sweetener, but you can also substitute it with honey, agave syrup, stevia, coconut sugar, or even regular sugar. You may need to adjust the amount if a different sweetener is used.
Low Sugar: For a lower sugar version, you can decrease the amount of maple syrup, and also skip the chocolate chips.
