Beetroot and Oatmeal Baked Vegan Patties
Ingredients
- 450 grams 5 oz cooked grated beetroot
- 150 grams 1 1/4 cups oatmeal
- 1 large onion
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 3-4 tbsp chopped parsley
- 2-3 tbsp chopped basil
- zest of one lemon
- 2 tbsp olive oil
Instructions
- DIRECTIONS
- In a large bowl combine together: grated beetroot, onion, olive oil, basil, parsley, lemon zest, salt, pepper, paprika and oatmeal. mix well untill all combined
- Â From the mixture form patties in the size you like.
- Â Spray with cooking oil a baking sheet/parchment paper.
- Â Put all the patties on the baking sheet
- Â Bake 15 min in each side at 200c/400f

Well, mine came out the colour of beetroot…how come yours didn’t??
Haven’t eaten them yet, as, not cooked….hope they taste better than they look…..
