Ingredients
 

  • 2 Bananas 280g, ripe
  • 1 Egg
  • 2 tablespoons 30g Butter
  • 2¾ cups 350g Flour
  • 2 teaspoons Instant-dry yeast
  • 1 teaspoon Salt
  • ½ cup Raisins
  • 1 tablespoon Butter for brushing

Instructions
 

  • DIRECTIONS
    1. In a bowl, mash bananas, add egg, butter and whisk until combined.
    2. In a separate bowl, mix flour, yeast and salt.
    3. Add the flour mixture into the banana mixture and mix until combined. Add raisins and mix until dough is formed.
    4. Cover and let rise until doubled in size.
    5. Divide the dough into 9 pieces, roll each piece into a ball and place a baking tray lined with parchment paper.
    6. Cover and let rise until doubled in size.
    7. Preheat oven to 180C (350F).
    8. Bake for 15-20 minutes, until golden. Remove from oven and brush with melted butter (optional).
    9. Allow to cool before serving.

    Wonderful rolls! We made 12 rolls instead of 9. Added chocolate chips instead of raisins. But we made with raisins on first go. Everyone loved the rolls. Thanks!

    I followed recipe and substituted King Arthur gluten free flour. Weighed butter and flour on kitchen scales i could not get mixture to form a ball so I added another egg, some milk and one tablespoon of melter butter. I managed to get a third of the mixture to stick together some it never rose and in the garbage it all went went!

    1. Usually when gluten free flour is used xanthum gum or guar gum is needed for recipes calling for regular flour. Check your yeast too. I’ve used yeast that was a year old and my bread wouldn’t rise.

  3. Tried this twice so far and we were unsuccessful both times- it was even worse the second time. The yeast does not work in this recipe – the dough does not raise and the buns are so dense and dry they are difficult to eat. I may switch out the yeast and try this as more of a soda bread recipe (can’t tell it has yeast in it anyways!) or experiment with adding liquid. But this recipe does not work as is.
