Ingredients
For the salad:
- 1 can 15oz/g Chickpeas
- 1 can 15oz/g Red kidney beans
- 1 can 15oz/g White kidney beans
- 2 Celery stalks
- 1 medium Cucumber diced
- ½ Red onion chopped
- 2 tablespoons Parsley
For the dressing:
- 3 tablespoons Olive oil
- 3 tablespoons Lemon juice
- 1 teaspoon Dijon mustard
- Salt
- Pepper
Instructions
- DIRECTIONS
- In a large bowl, mix chickpeas, red beans, white beans, chopped celery stalks, diced cucumber, chopped red onion and chopped parsley.
- In a separate small bowl whisk all dressing ingredients.
- Pour the dressing over the salad, mix well and serve.
This is a great recipe; I made a batch to eat for lunch at work. Besides the wonderful taste, I feel full and I’m happy to avoid the usual after-effects of my old lunch habits. Definitely helping me make the shift to healthy, happy eating. Thanks!
