For the salad:

1 can 15oz/g Chickpeas
1 can 15oz/g Red kidney beans
1 can 15oz/g White kidney beans
2 Celery stalks
1 medium Cucumber diced
½ Red onion chopped
2 tablespoons Parsley

For the dressing:

3 tablespoons Olive oil
3 tablespoons Lemon juice
1 teaspoon Dijon mustard
Salt
Pepper

DIRECTIONS
1. In a large bowl, mix chickpeas, red beans, white beans, chopped celery stalks, diced cucumber, chopped red onion and chopped parsley.
2. In a separate small bowl whisk all dressing ingredients.
3. Pour the dressing over the salad, mix well and serve.
