Ingredients
 

For the potatoes:

  • 2 tablespoons Olive oil
  • Salt to taste
  • Pepper to taste
  • 1½ pounds 670g Baby potatoes

For the salmon and veggies:

  • 1 tablespoon Balsamic vinegar optional
  • 2 tablespoons Olive oil
  • Lemon juice from 1 large lemon
  • 2 Crushed garlic cloves
  • 2 tablespoons Parsley crushed
  • 4-6 Salmon fillets
  • Asparagus
  • ½ head Broccoli cut into florets
  • Salt to taste
  • Pepper to taste

Instructions
 

  • DIRECTIONS
    1. Preheat oven to 400F (200C). line a baking sheet with foil or parchment paper and set aside.
    2. In a bowl, toss potatoes with 2 tablespoons of olive oil, salt and pepper.
    3. Spread the potatoes on the baking sheet and bake for 30 minutes.
    4. Meanwhile: in a small bowl whisk 2-3 tablespoons of olive oil, lemon juice, balsamic vinegar, crushed garlic, chopped parsley, salt and pepper.
    5. Push potatoes to one side of the sheet pan and arrange salmon and veggies on the pan. drizzle the salmon and veggies with the sauce and put back in the oven.
    6. Bake for 15 minutes.
    7. Enjoy!
