Noodle Salad Recipe

Noodle Salad Recipe
Ingredients
- 125 g Bean thread noodles
- 1 Cucumber julienned
- 1 Carrot julienned
- ¼ cup Cabbage thinly sliced
- 2 tablespoons Cilantro chopped
- 2 tablespoons Mint chopped
For the sauce:
- 1 tablespoon Sesame seed oil
- 2 tablespoons Honey/maple
- 2 tablespoon Soy sauce
- 2 teaspoons Lemon juice
- 1 garlic clove crushed
- 1 teaspoon Sesame seeds
- ½ teaspoon Red chili flakes optional
Optional:
- Crushed peanuts/cashew
Instructions
- DIRECTIONS
- Place the noodles in a large bowl, then cover with boiling water. Allow to soak for 20 minutes.
- Meanwhile make the salad: to a large bowl add cucumber, carrot, cabbage, cilantro, mint. Drian the noodles and add to the bowl.
- Make the dressing: in a bowl mix sesame seed oil, honey/maple, soy sauce, lemon juice, crushed garlic, sesame seeds and red chili flakes.
- Pour the sauce over the salad and mix until well combined.
- Chop some roasted peanuts or cashews and sprinkle over the salad (optional).
- Serve!
