Ingredients
 

  • 125 g Bean thread noodles
  • 1 Cucumber julienned
  • 1 Carrot julienned
  • ¼ cup Cabbage thinly sliced
  • 2 tablespoons Cilantro chopped
  • 2 tablespoons Mint chopped

For the sauce:

  • 1 tablespoon Sesame seed oil
  • 2 tablespoons Honey/maple
  • 2 tablespoon Soy sauce
  • 2 teaspoons Lemon juice
  • 1 garlic clove crushed
  • 1 teaspoon Sesame seeds
  • ½ teaspoon Red chili flakes optional

Optional:

  • Crushed peanuts/cashew

Instructions
 

  • Place the noodles in a large bowl, then cover with boiling water. Allow to soak for 20 minutes.
  • Meanwhile make the salad: to a large bowl add cucumber, carrot, cabbage, cilantro, mint. Drian the noodles and add to the bowl.
  • Make the dressing: in a bowl mix sesame seed oil, honey/maple, soy sauce, lemon juice, crushed garlic, sesame seeds and red chili flakes.
  • Pour the sauce over the salad and mix until well combined.
  • Chop some roasted peanuts or cashews and sprinkle over the salad (optional).
  • Serve!
