For the sauce:
1tablespoonSesame seed oil
2tablespoonsHoney/maple
2tablespoonSoy sauce
2teaspoonsLemon juice
1garlic clovecrushed
1teaspoonSesame seeds
½teaspoonRed chili flakesoptional

Instructions
Place the noodles in a large bowl, then cover with boiling water. Allow to soak for 20 minutes.
Meanwhile make the salad: to a large bowl add cucumber, carrot, cabbage, cilantro, mint. Drian the noodles and add to the bowl.
Make the dressing: in a bowl mix sesame seed oil, honey/maple, soy sauce, lemon juice, crushed garlic, sesame seeds and red chili flakes.
Pour the sauce over the salad and mix until well combined.
Chop some roasted peanuts or cashews and sprinkle over the salad (optional).
Serve!
