How to Make Crispy Oatmeal Cookies

Ingredients
 

  • 1¼ cups 160g Oat flour
  • ¾ cup 70g Quick/Rolled oats
  • 1 teaspoon Baking powder
  • ¼ teaspoon Salt
  • â…“ cup 72g Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • â…“ cup 67g Sugar
  • 3 tablespoon Milk of choice

Instructions
 

  • DIRECTIONS
    1. Line a baking sheet with parchment paper and set aside. Preheat oven to 180°C (350°F).
    2. In a large bowl mix oat flour, rolled oats, baking powder, salt and sugar.
    3. Add coconut oil, vanilla extract, milk and mix until combined.
    4. Add chopped nuts and mix until combined (this step is optional)
    5. Shape the dough into 14-16 small balls and arrange them on prepared sheet. Flatten the cookies.
    6. Bake for 13-15 minutes.
    7. Allow to cool on the tray for 5-10 minutes, then transfer to a wire rack and allow to cool completely.

    Can i use self rising flour and stevia for the sugar and canola oil? instead? will come out same?

    1. Hi,

      Self-rising flour: You can use it, but the cookies will be less crispy and more cakey.

      Stevia: You can swap it, but cookies may turn out drier and won’t brown like with sugar.

      Canola oil: It works, but cookies may be a little softer since coconut oil helps with crispiness. You also can use butter instead of coconut oil.

      Bottom line: If you change all three, the cookies won’t come out the same.
      For best crispy results, at least keep the oat flour.
