- 1 cup (90 g) Rolled oats
- ¼ cup (30 g) Chopped almonds
- ¼ cup (30 g) Chopped walnuts
- ¼ cup (30 g) Pumpkin seeds

- ¼ cup (45 g) Raisins/cranberries/dark chocolate chips
- 1 tablespoon (14 g) Chia seeds
- ¼ cup (60 ml) Coconut oil
- ⅓ cup (60 ml) Maple syrup
- Salt pinch
Instructions
- Preheat oven to 350F (180C). Line a baking tray with parchment paper and set aside.
- Place all ingredients in a mixing bowl and mix until well combined.
- Using a cookie cutter or a small cake ring shape the cookies: place the ring on the tray, then spoon into the ring 2-3 tablespoons of the granola mixture. Press the mixture with the back of the spoon.
- Bake for 20-25 minutes or until golden. Note: keep an eye while baking, the baking time may change from oven to oven.

These are super delicious, I even added a tablespoon of linseed to the mixture. As soon as a batch finish I do another. Liked by the whole family. Sometimes I even crumble one on the ice cream.

I line a muffin pan with baking paper and it works perfect every time. Once tried cupcake paper with spray&bake but that didn’t work.
use a muffin tin. Add mixture in muffin liners. Its perfect and if the crumbles do end up falling you have a little cup to catch them.
add the mixture to cup and press. down with spoon to hold it all together. I fill it to the top
