Fall is here, which means it’s time to break out the cozy sweaters, fluffy socks, and your all-time favorite mug for making this Copycat Starbucks Pumpkin Spice Latte recipe! It’s sweet n’ spicy, creamy and customizable, and blissfully caffeinated. In other words, this easy 6-ingredient PSL is just what the season calls for. 🍁☕🎃

While I have nothing against big coffee chains like Dunkin’ and Starbucks, the idea of spending what amounts to an hour’s minimum wage on a single drink depresses me. Luckily, making café-style drinks is easy. Whether you’re craving toasty tahini coffees, creamy chai lattes, or autumnal pumpkin spice lattes, at home is the place to be. No lines, no upcharges, no tips!
Ingredients & Substitutions

- Milk – Unless otherwise specified, Starbucks (and many other cafés) will use whole milk as their default base for lattes. Whole milk will yield the creamiest results, but you can easily swap in any percentage of dairy milk or your favorite type of plant-based milk you prefer.
- Pumpkin Purée – Make sure you’re using 100% pure pumpkin, not pumpkin pie filling. They’re often packaged similarly, so read your labels!
- Maple Syrup – I personally love maple syrup because it pairs beautifully with pumpkin flavors, but you can use white sugar, brown sugar, honey, agave, or any other sweetener you like.
- Vanilla Extract – Just a splash adds aromatic depth and a warm sweetness. You can also use vanilla paste or powder.
- Pumpkin Pie Spice – My homemade pumpkin pie spice can be made with other single spices you likely have on hand. Store-bought works fine, too!
- Espresso – The caffeinated heart of any café latte. You can also use strongly brewed conventional coffee, or swap in cold brew concentrate for an iced pumpkin spice latte.
- Whipped Cream – Optional, but delightful as a topper.

What Is Espresso?
Espresso is a concentrated form of coffee brewed by forcing hot water through finely ground beans at high pressure. Unlike regular drip coffee, which is lighter and brewed in larger amounts, espresso has a rich, bold flavor with a layer of golden crema on top. It’s also short-lived—Starbucks trains baristas to use or dispose of espresso shots within 10 seconds.
So, how do you make it at home? The traditional method is an espresso machine, which extracts intensely flavored java in just 25–30 seconds. Machines can range widely in price, from affordable entry-level models in the $100-150 range to professional café-quality setups that can creep into the thousands. As a bonus, these machines come with steaming wands for milk.
Luckily, there are plenty of budget-friendly alternatives. A stovetop Moka pot brews a strong, espresso-like coffee using steam pressure, and an AeroPress with a fine grind can come close to espresso’s concentration. Even coffee concentrate or strong cold brew can stand in. As for making frothed milk, a wand frother, pitcher frother, French press, whisk, or even mason jar will work!


Optional Variations & Dietary Adaptations
- Iced Pumpkin Spice Latte – Use cold brew concentrate or chilled espresso, cold-from-the-fridge milk, and plenty of ice for a frosty twist.
- Sugar Free Pumpkin Spice Latte – Swap in the sugar-free sweetener of your choosing, like stevia or monk fruit.
- Skinny Pumpkin Spice Latte – Use skim milk or a low-calorie plant milk and omit the whipped cream topping for a more virtuous drink. You can also opt to make it sugar-free to save on more calories.
- Decaf Pumpkin Spice Latte – Use decaf espresso for all the flavor without the same buzz. Can’t do any caffeine at all? Chicory herbal “coffee” and Dandy Blend tea are great alternatives.
- Vegan Pumpkin Spice Latte – Use your favorite plant-based milk and make sure your sweetener of choice is vegan-friendly. Note that not all vegan milks are great for frothing, so try to find “barista blends” which are specially formulated for coffee drinks.
- Size/Strength – I used one espresso shot and a cup of milk, making this similar to a tall pumpkin spice latte from Starbucks. If you prefer a stronger kick, go for two shots and leave the other ingredients the same, or increase the milk, sweetener, and spices to make a larger drink.
Expert Tips & Tricks
- Don’t overheat the milk. Warm your milk until it’s steamy but not boiling (around 150°F/65ºC is ideal). If it gets too hot, it will scorch and lose its natural sweetness, plus it won’t froth as well.
- Add vanilla off the heat. Stir in your vanilla extract after removing the milk mixture from the stove. This keeps the flavor nice and potent, preventing it from cooking off.
- Master your espresso shot. Use freshly ground beans, tamp evenly, and aim for a 25–30 second extraction time. This gives you a nice crema and rich coffee flavor without tasting bitter or sour.
- Master the froth. The trick is to froth warm (not boiling) milk until it doubles in volume with fine, silky bubbles.
- Sweeten to taste. Pumpkin spice lattes run pretty sweet in coffee shops, which isn’t my preference. I recommend you start with less maple syrup and adjust to your liking. You can always add more, but you can’t take it out!
How to Serve Pumpkin Spice Latte
A homemade pumpkin spice latte is a treat all on its own, but you can dress it up to make it feel even more special. Top it with a generous swirl of whipped cream and a sprinkle of pumpkin pie spice or cinnamon sugar for a sparkly coffeehouse finish. A drizzle of caramel sauce or maple syrup adds extra sweetness, and a cinnamon stick for stirring is just plain cute.
Pumpkin spice lattes also pair beautifully with fall bakes like pumpkin cheesecake, pumpkin muffins, maple loaf cake, apple hand pies, pumpkin bread or a freshly baked cinnamon roll. If you’re entertaining, consider making a large batch in advance and keep it warm in a slow cooker for guests to serve themselves. Don’t forget to set out some garnishes for everyone to gussy up their cup!


Homemade Pumpkin Spice Latte Recipe
Ingredients
- 1 cup (240 ml) Milk any kind
- 1-2 tablespoon (15-30 g) Pumpkin puree
- 1-2 tablespoons Maple syrup or honey/sugar *adjust to taste
- 1 teaspoon Vanilla extract
- ¼ teaspoon Pumpkin pie spice
- 1 shot (40 ml) Espresso or ½ cup (120 ml) strong brewed coffee
For serving:
- Whipped cream optional
- pinch pumpkin spice or cinnamon for garnish (optional)
Instructions
- Heat the pumpkin milk: In a small saucepan, whisk together milk, pumpkin puree, sweetener, and pumpkin pie spice. Warm gently over medium heat until hot but not boiling.
- Add vanilla: Remove from heat, stir in vanilla extract.
- Froth (optional but great): Use a milk frother, whisk, or blend for 20–30 seconds until frothy.
- Assemble: Pour the espresso (or coffee) into a mug. Add the spiced pumpkin milk mixture on top and stir.
- Finish: Top with whipped cream and a dusting of pumpkin spice or cinnamon.
