  • 12 oz 340g Pitted dates- about 15 large dates
  • ½ cup 60g Walnuts
  • â…“ cup 80g Natural peanut butter
  • ¼ cup 40g Dark chocolate chips (optional)
  • ¼ teaspoon Salt
  • 2 tablespoons Chia seeds
  • 1 teaspoon Vanilla extract

      I made these Homemade No-Bake Energy Bars, placed them in the refrigerator for about 3-hours.
      After slicing them into bars they fell apart, like there was nothing holding them together, however they were very tasty. I processed the dates by them self before adding all the other ingredients. While I was processing the dates, I noticed they were fairly dry and not very sticky. I completed the recipe and they just fell apart while cutting them into bars. Did I use the wrong type of Dates??

      1. Same thing happened with mine. I followed the recipe exactly using the metric measurements. Anyone know how I might reprocess to make them stick together? Too expensive to just ditch the whole batch. They were intended to go to work with my daughter. No way to transport these crumbs

    Boy are these tasty! The nicest health bars I have ever eaten – like a popular peanut bar you can buy especially with dark chocolate chips! However I had the exact same issue with them falling apart even after pressing the mixture down hard and leaving them in fridge for 3 hours. So I put them back in blender with more peanut butter. Fifty per cent better. Really my blender could not cope with the dates or peanut butter – the mixture was just too stiff – so next time I will blend the dry ingredient

    Sorry my last comment was cut short for some reason. I now soak the dates (and strain them) and combine the wet ingredients together before adding to the dry – they have never fallen apart since! I do not even have to use a processor – I just grind the oats and nuts first.

    1. I soaked my dates first but that was not enough. I will try reprocessing with more peanut butter. Thanks Clare for your helpful tip
