Healthy Oatmeal Spinach Crepes Recipe

Healthy Oatmeal Spinach Crepes Recipe
Ingredients
- 1 cup 90g Oatmeal
- Pinch Salt
- 1 teaspoon Sugar optional
- 2 Eggs medium
- 1¼ cups 300ml Milk/water
- 30-40 g Spinach
Instructions
- DIRECTIONS
- Put oats into a powerful blender and blend into flour. Note: you can use store-bought oat flour.
- Add salt, sugar eggs and milk. Blend until smooth. Add spinach and blend again until smooth.
- Heat a small non-stick pan over low-medium heat.
- Pour about 1/4 of the batter to the hot pan. Spread the batter evenly to create a thin crepe. Cook for 1 minute, flip and cook for another 20-30 seconds.
- Repeat.
- Serve with cottage, cream cheese, yogurt, nut butter, jam and more.
