- 1-2 teaspoons Mustard
- 1 Garlic clove crushed
- Lemon zest from one lemon
- Lemon juice from half a lemon
- Salt to taste
- Pepper to taste
For the salad:
- 2 stalks celery diced
- ½ Red onion finely chopped
- 4 Radishes diced
- 4-6 Lettuce leaves chopped
- 2 tablespoons Parsley/chives/dill chopped1/4 cup cranberries
Instructions
- DIRECTIONS
- Prepare the salmon: preheat oven to 375F (190C). Place salmon fillet on a baking tray lined with parchment paper. Drizzle olive oil and sprinkle paprika, salt and pepper. Evenly coat the salmon with the oil and spices.
- Bake the salmon for 16-20 minutes, until fully cooked but still juicy. Let cool for 5-10 minutes.
- Meanwhile make the dressing for salmon salad: in a bowl, whisk mayonnaise, mustard, crushed garlic, lemon zest, lemon juice, salt and pepper. Whisk until well combined.
- Using a fork, flake the salmon into small chunks and transfer into a large mixing bowl. Add chopped onion, diced celery, diced radish, chopped lettuce, chopped parsley and cranberries.
- Pour the dressing over the salad and mix well.
