Prepare the salmon: preheat oven to 375F (190C). Place salmon fillet on a baking tray lined with parchment paper. Drizzle olive oil and sprinkle paprika, salt and pepper. Evenly coat the salmon with the oil and spices.
Bake the salmon for 16-20 minutes, until fully cooked but still juicy. Let cool for 5-10 minutes.
Meanwhile make the dressing for salmon salad: in a bowl, whisk mayonnaise, mustard, crushed garlic, lemon zest, lemon juice, salt and pepper. Whisk until well combined.
Using a fork, flake the salmon into small chunks and transfer into a large mixing bowl. Add chopped onion, diced celery, diced radish, chopped lettuce, chopped parsley and cranberries.
