Pryaniki (пряники) are famous Russian cookies that comes in different flavors. This time I choose honey spice cookies (they are the most popular). These cookies are soft and they a texture of almost a cake. These cookies are perfect for the holiday season.

Pryaniki – Russian Honey Spice Cookies

Ingredients
 

For the dough:

  • cup 180ml Milk
  • ¼ cup 80g Honey
  • ½ cup 100g Brown/white sugar
  • ½ teaspoon Ground Cinnamon optional
  • ¼ teaspoon Ground ginger optional
  • ¼ teaspoon Salt
  • 1 Egg
  • 2 tablespoon Vegetable Oil
  • 1 teaspoon Vanilla extract
  • 3 cups 375g Flour
  • 1 teaspoon Baking powder
  • ¼ teaspoon Baking soda

For the glaze:

  • 1 cup 130g Powdered sugar
  • 5-7 tablespoons Milk/Water
  • 1 teaspoon Lemon juice

Instructions
 

  • DIRECTIONS
    1. Make the cookies: Preheat oven to 170C (350F). Line two baking sheets with parchment paper and set aside.
    2. In a medium saucepan heat milk, honey, slat and spices. Notes: at this stage you can add any spices that you like, for example: lemon zest, orange zest, cloves, nutmeg and more. Do not boil, heat just until dissolved and combined.
    3. Transfer the mixture into a large bowl and allow to cool slightly. Then add vegetable oil, egg, vanilla extract and mix until combined.
    4. In a large bowl mix flour, sugar, baking powder and soda.
    5. Gradually, while constantly whisking add the flour to the liquid mixture and mix until dough is formed. The dough should be soft but not sticky.
    6. Shape the dough into small balls and arrange them on prepared baking tray. Slightly flatten the balls.
    7. Bake for 9-12 minutes, or until lightly golden on the bottom. Do not over bake.
    8. Allow to cool.
    9. Meanwhile make the glaze: in a bowl place powdered sugar, then add water/milk, 1 tablespoon at the time and mix until smooth.
    10. Dip each cookie in the glaze the brush evenly all over the cookie.
    11. Allow to set (takes approximately 30 minutes).

    Please tell me if I don’t want to put spices in the dough, because my main concern is to just completely have honey flavor and only honey flavor, is it ok to make them without the spices for a full flavor honey tasting cookie. Thank you so much! Ingrid Illiana Gerbich 🥰😋💖❤
