Pistachio Date Bars | Pistachio Energy Bars

Ingredients
 

  • 250 g Pistachios *toasted
  • 400 g Madjool dates pitted
  • Pinch Salt
  • 60 g Dark chocolate
  • 1 tablespoon Coconut oil optional
  • 60-80 grams pistachios for topping

Instructions
 

  • DIRECTIONS
    1. Place pistachios into a food processor and crush into crumbs.
    2. Add pitted dates, salt and process and combined.
    3. Line a 8-inch (20cm) square baking pan with parchment paper.
    4. Press the mixture onto bottom of the pan and spread evenly.
    5. Chop dark chocolate and place in a heat proof bowl, add coconut oil and melt in 15 seconds pulses in the microwave.
    6. Decorate with peeled and toasted pistachios.
    7. Cut the mixture into bars, then drizzle melted dark chocolate on top. Refrigerate/freeze until ready to serve.
    Notes:
    • You can use store bought date paste
    • If your food processor not powerful enough
    • Keep in the fridge or freezer
