Pistachio Date Bars | Pistachio Energy Bars
Ingredients
- 250 g Pistachios *toasted
- 400 g Madjool dates pitted
- Pinch Salt
- 60 g Dark chocolate
- 1 tablespoon Coconut oil optional
- 60-80 grams pistachios for topping
Instructions
- DIRECTIONS
- Place pistachios into a food processor and crush into crumbs.
- Add pitted dates, salt and process and combined.
- Line a 8-inch (20cm) square baking pan with parchment paper.
- Press the mixture onto bottom of the pan and spread evenly.
- Chop dark chocolate and place in a heat proof bowl, add coconut oil and melt in 15 seconds pulses in the microwave.
- Decorate with peeled and toasted pistachios.
- Cut the mixture into bars, then drizzle melted dark chocolate on top. Refrigerate/freeze until ready to serve.
Notes:- You can use store bought date paste
- If your food processor not powerful enough
- Keep in the fridge or freezer
