Everyone knows the famous chocolate-coconut snack “Bounty”. But did you know that you can make a healthy version of it at home? With this recipe you can make healthy vegan bounty bars that I call them “bounty dates”.

Bounty Dates | Healthy Vegan Bounty Bites
Ingredients
- 1 cup 90g shredded/desiccated coconut
- â…“ cup 80ml coconut milk
- 15 Medjool dates
- 180 g Dark chocolate
Instructions
- DIRECTIONS
- Remove the pit from the dates and set aside.
- In a bowl mix shredded/desiccated coconut with coconut milk.
- Open each date and fill with coconut mixture, close tightly.
- Chop the chocolate and place in a heat proof bowl. melt in the microwave in 20 second pulses until completely melted.
- Dip each date in the melted chocolate, shake as much excess chocolate as possible.
- Arrange chocolate covered dates on a plate and refrigerate for at least 30 minutes or until ready to serve. You can keep them in the fridge or freezer.
