In a bowl mix shredded/desiccated coconut with coconut milk.
Open each date and fill with coconut mixture, close tightly.
Chop the chocolate and place in a heat proof bowl. melt in the microwave in 20 second pulses until completely melted.
Dip each date in the melted chocolate, shake as much excess chocolate as possible.
Arrange chocolate covered dates on a plate and refrigerate for at least 30 minutes or until ready to serve. You can keep them in the fridge or freezer.
