Ingredients
 
 

  • 2-3 tablespoons Olive oil
  • 1 Onion chopped
  • 2 Carrots diced
  • 70 g Peas
  • 500 g Chicken breast cut into bite size pieces
  • Salt to taste
  • Pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1½ cups Quinoa, rinsed
  • ½ cup Green lentils, rinsed
  • 4 cups 1L Water

Instructions
 

  • DIRECTIONS
    1. In a large pot heat the olive oil over medium heat. Add onion and diced carrot and sauté for 4-5 minutes.
    2. Add chicken breast and cook until cooked through, about 6-7 minutes. Season with salt, pepper, cumin and paprika.
    3. Rinse the quinoa and the lentil under cold water until the water is clean. Add rinsed quinoa and lentils to the pot, add peas, fill with water. Bring to a boil, then cover and reduce the heat to low and cook for 15 minutes. Leave the lip on for another 5 minutes.
    4. Serve.
