Ingredients
For the meatballs:
- 1¼ lbs. 560g Ground chicken
- 1 teaspoon Turmeric
- Salt to taste
- ½ teaspoon Chili flakes/black pepper
- ½ teaspoon cumin
- ¼ bunch Coriander chopped
- 1 Onion finely chopped
- 2 tablespoons Oil
For the sauce:
- Olive oil
- 1 tablespoon Ginger grated
- 1 tablespoon Garlic grated
- 1 teaspoon Curry powder
- 1 teaspoon Garam masala
- 1 teaspoon Paprika
- 1 teaspoon Turmeric
- Salt to taste
- 2 tablespoons Tomato paste
- 1 can 400g Coconut milk
- 1 cup 240ml Chicken stock
Instructions
- DIRECTIONS1. Make the meatballs: in a bowl, mix ground chicken, spices, coriander and chopped onion. Form into balls bout 1 inch in diameter. 2. In a large skillet add oil on over a medium heat. Place meatballs in the skillet and brown them for about 1-2 minutes from each side. Remove cooked meatballs from the pan and set aside. 3. Make the sauce: in the same pan heat oil, add curry powder, garam masala, paprika, grated garlic, grated ginger and cook for 1 minute. Add tomato paste and cook, stirring for 1 minute. Add chopped onion and cook for 4-5 minutes. 4. Add coconut milk, chicken stock, salt and stir. Add chicken meatballs, bring to a simmer. Reduce the heat to low, cover and cook for 30 minutes. turn the heat off and add chopped coriander.
