Cheese Stuffed Mashed Potato Balls
- 3 large potatoes
- 2 medium eggs
- ¼ bunch parsley or green onion
- 1 teaspoon salt
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 1 teaspoon paprika
- Cheddar cheese cubed
For coating:
- ½ cup 60g flour
- 2 eggs
- 1 cup 110g breadcrumbs
- Oil for frying
Cheesy Mashed Potato Pancakes:
- 3 medium potatoes
- ¼ cup 30g flour
- 1 egg
- 1 cup 120g cheddar cheese, shredded
- 2 green onions
- 1 cup 110g breadcrumbs
- 1 teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- Oil for frying
- Sour cream for serving
Mashed Potato Swirls:
- 2½ pounds 1.2kg Potatoes
- 4 tablespoons 60g Butter, room temperature
- 3 Egg yolks
- Salt to taste
- Black pepper to taste
- ¼ teaspoon Nutmeg
- 2-3 tablespoons Chives chopped

- DIRECTIONSCheese Stuffed Mashed Potato Balls 1. In a large pot of salted water boil potatoes until tender. 2. Peel the potatoes, mash and let cool. 3. Add beaten eggs, salt, pepper, paprika, garlic powder and chopped parsley. Mix until combined. Refrigerate for 30 minutes. 4. Scoop 1 tablespoon of potato mixture and flatten on your hand, place 1 cube of cheddar cheese in the center, wrap the potato mixture around the cheese and shape into ball. 5. Prepare 3 separate balls: 1 with flour, 1 with beaten eggs, 1 with breadcrumbs. Coat the potato ball in flour, then egg, then breadcrumbs 6. In a medium pan heat vegetable oil to 360F (180C). fry potato balls in small batches for about 2-3 minutes until golden brown. 7. Transfer to a paper towel to drain. Serve warm Cheesy Mashed Potato Pancakes: 1. In a large pot of salted water boil potatoes until tender. 2. Peel the potatoes, mash and let cool. 3. Add flour, chopped green onions, cheddar, salt, pepper, garlic powder and egg. Mix until well combined. 4. With your hands, create pancakes from the potato mixture. Coat then with breadcrumbs. 5. Heat 3-4 tablespoons of oil in a large pan. Fry the pancakes over medium-high heat for 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel to drain. 6. Serve with sour cream. Mashed Potato Swirls: 1. Peel and cut potatoes into chunks. Place in a large pot, cover fully with cold water, add 1-2 teaspoons of salt. Bring to a boil. simmer until tender, about 30 minutes. 2. Preheat oven to 400F (200C). 3. Drain and let the potatoes to dry few minutes. Transfer to a large bowl and mash, add butter and stir until incorporated. Add egg yolks and stir until smooth. Season with salt, pepper, nutmeg and chives. 4. Transfer the mashed potato into a piping bag fitted with a wide star tip. Pipe mashed potato mixture on a baking tray lined with parchment paper. 5. Bake for minutes 15-20, until golden brown. Notes: • When you adding to egg yolks make sure that the potato mixture is not too hot, otherwise the egg yolks will cook.
