Ingredients
  

Strater: Roasted Cauliflower Clorets:

  • 1 head cauliflower
  • 3 tablespoons Olive oil
  • Salt to taste
  • Black pepper to taste
  • ½ teaspoon Garlic powder
  • ½ teaspoon Paprika
  • 1 teaspoon Oregano

Main Course: Chicken Curry

  • 900 g 2 pounds chicken breast, cut into cubes
  • 2 onions
  • 3 garlic cloves
  • 1 tablespoon grated ginger
  • 3 tablespoons vegetable oil
  • 2 tablespoon curry powder
  • 1.5 teaspoons salt
  • ½ teaspoon black pepper
  • 4 large tomatoes chopped
  • 1 can 400g/14oz coconut cream/milk
  • ¾ 180ml water
  • ½ teaspoon garam masala optional

Dessert: Apple Semolina Cake

  • 1 cup 125g Flour
  • 1 cup 170g semolina
  • ¾ cup + 2 Tbsp. 175g Sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 2 tablespoons 30g butter, melted
  • ¾ cup 180ml Milk
  • 6 apples
  • 2-3 tablespoons Lemon juice

Instructions
 

  • DIRECTIONS
    Starter: Roasted cauliflower florets:
    1. Preheat oven to 430F (220C).
    2. Cut 1 head of cauliflower into small-medium florets.
    3. Place in a large bowl. Add olive oil, salt, pepper, garlic powder, paprika, oregano. Stir to coat.
    4. Place on a baking try lined with parchment paper. Spay with cooking oil.
    5. Bake for 20 minutes, until golden brown.
    Main Course: Chicken Curry
    1. In a large pan heat oil. Add chopped onions and sauté until golden, over medium-low heat. stir occasionally.
    2. When onions are golden add grated garlic and ginger. Stir and cook for 2 minutes. Add chopped tomatoes and cook, stirring occasionally, until soft. Add curry powder and cook, stirring, for 2 minutes. Add chicken breast, season with salt and pepper, cook for 5 minutes, until golden. Cover the pan and cook for 2-3 minutes more. Add water, cover and cook 10 minutes.
    3. Add coconut milk/cream, season with garam masala and salt, stir, and cook until lightly thickens.
    4. Serve with naan bread or rice. 
    Dessert: Apple Semolina Cake
    1. Preheat oven to 350F (175C). Grease 8-inch (20cm) round cake pan with butter, line bottom and sides with parchment paper. Grease the parchment as well.
    2. In a large bowl mix flour, semolina, sugar, baking powder and salt. Set aside.
    3. Peel the apples, grate and transfer to a bowl. Add lemon juice and stir. Set aside.
    4. Spread 1/4 of the flour mixture over the bottom of the pan, then spread 1/3 of the grated apples. Repeat this process with the reaming flour mixture and grated apples. In total: 4 flour layer and 3 apple layers.
    5. In a small bowl mix milk and melted butter. Pour milk mixture over the cake and pierce with a fork so the milk mixture will pass through the layers.
    6. Bake for 40-45 minutes. Let cool before slicing.
