In a small saucepan combine sugar and water. Heat until sugar dissolves, turn the heat off and allow to cool completely.
Make the mojito:
Put mint leaves in your palm and clap to release the oils. Place the mint in a high ball glass.
Pour in white rum, simple syrup, lime juice and mix.
Add ice and finish with soda water. Mix and garnish with fresh mint leaves.
