Ingredients
 

  • 2 tablespoons Oil/ghee
  • 1 Onion
  • 1 tablespoon Crushed Garlic
  • 1 tablespoon Ginger paste
  • 2-3 teaspoons Curry powder
  • 3 Tomatoes diced
  • 1 â…“ cup Red lentils/orange lentils
  • 4 cups 960ml Water/stock
  • Coriander chopped
  • Salt to taste
  • Pepper to taste

Instructions
 

  • DIRECTIONS
    1. Rinse the lentil and set aside.
    2. In a large pan, heat oil or ghee. Add chopped onion and sauté for 3-4 minutes. Add crushed garlic, ginger paste and curry powder. Cook for 1-2 minutes.
    3. Add chopped tomatoes and cook until soft.
    4. Add rinsed lentil, water/vegetable stock, salt, pepper and bring to a boil. Reduce the heat to low heat, cover and cook for about 25 minutes. Open the lid every 4-5 minutes and stir.
    5. Turn the heat off, add chopped coriander and stir well.
    6. Serve!
