Quick and Easy Curry Soup Recipe
This quick and easy curry soup is the perfect soup recipe for lazy days. If you are looking for easy veggie soup that doesn’t requires long preparation, this recipe is for you. Quick and Easy Curry Soup Recipe
Ingredients
- 2 tablespoons Olive oil
- 1 Onion large
- 3-4 Garlic cloves crushed
- 1 tablespoon Ginger grated
- 1 large head of Cauliflower or 2 small 1kg, cut into chunks
- 3 teaspoons Curry powder
- Salt to taste
- Pepper to taste
- 2-2½ Liters 8-10 cups Water/vegetables stock
- 1 can 400ml Coconut milk (optional)
Instructions

- In a large pot heat olive oil. Add chopped onion and cook for 5-6 minutes, until golden.
- Add crushed garlic, grated ginger and sauté for 1 minute.
- Add curry powder, stir and cook for 1 minute.
- Add cauliflower chunks, salt, pepper and water/vegetable stock. Bring to a boil, cover with a lid, reduce the heat to low and simmer for 20 minutes.
- Remove the pot from the heat, using a hand blender, blend the soup until smooth.
- Place the pot back to heat, add coconut milk (this step is optional), check the seasoning and if needed add salt/pepper. Simmer for 5-10 minutes.
- Serve and enjoy your quick and easy curry soup.
