This quick and easy curry soup is the perfect soup recipe for lazy days. If you are looking for easy veggie soup that doesn’t requires long preparation, this recipe is for you. This lazy soup is perfect midweek night when you don’t have time to cook. The recipe is vegan and also pretty healthy and quilt free.

Quick and Easy Curry Soup Recipe

Ingredients
 

  • 2 tablespoons Olive oil
  • 1 Onion large
  • 3-4 Garlic cloves crushed
  • 1 tablespoon Ginger grated
  • 1 large head of Cauliflower or 2 small 1kg, cut into chunks
  • 3 teaspoons Curry powder
  • Salt to taste
  • Pepper to taste
  • 2-2½ Liters 8-10 cups Water/vegetables stock
  • 1 can 400ml Coconut milk (optional)

Instructions
 

  • DIRECTIONS
    1. In a large pot heat olive oil. Add chopped onion and cook for 5-6 minutes, until golden.
    2. Add crushed garlic, grated ginger and sauté for 1 minute.
    3. Add curry powder, stir and cook for 1 minute.
    4. Add cauliflower chunks, salt, pepper and water/vegetable stock. Bring to a boil, cover with a lid, reduce the heat to low and simmer for 20 minutes.
    5. Remove the pot from the heat, using a hand blender, blend the soup until smooth.
    6. Place the pot back to heat, add coconut milk (this step is optional), check the seasoning and if needed add salt/pepper. Simmer for 5-10 minutes.
    7. Serve and enjoy your quick and easy curry soup.

    WHAT IS CURRY POWDER?
    Curry powder is a blend of spices that is usually used in Indian cuisine. Although in Indian cuisine it is common to use whole spices rather than powders, today around the world, the use of curry powder is more common. There are many different recipes for curry powder, but usually all of them contain: ground cumin, ground turmeric, ground coriander, ground ginger, ground cinnamon, ground cardamom, pepper, mustard powder.
    WHAT CAN BE USED INSTEAD OF CURRY POWDER?
    If you can’t find curry powder in your local store. You can use some main ingredients of the curry powder such as: cumin, turmeric, cinnamon, ginger, pepper, coriander and other spices that you like.
