Everyone knows and loves hummus, everyone also loves and knows pasta, but have you ever thought that you can combine the dishes? What you get is pasta with creamy and rich hummus (chickpea) sauce. An unusual recipe that also happens to be vegan.

Hummus Pasta Recipe

Ingredients
 

  • 1 can Chickpeas drained
  • 1 clove Garlic
  • 3-4 tablespoons Tahini or more if you prefer creamier hummus
  • 2 tablespoons Olive oil
  • Juice from one Lemon
  • 1 teaspoon Salt
  • 1 Red/white onion chopped
  • 80 g Sun dried tomatoes
  • 80 Spinach
  • 60-80 ml Pasta water
  • 200 g Pasta

Instructions
 

  • DIRECTIONS
    1. Fill a large pot with water, add 1 tablespoon of salt and bring to a boil.
    2. In a food processor or a powerful blender place chickpeas, garlic, tahini, olive oil, lemon juice and salt. Process until smooth. Set aside.
    3. In a large pan, heat 2 tablespoon of olive oil. Add chopped onion and sauté for 5-6 minutes. Add sun dried tomatoes and cook for 1-2 minutes. Add spinach and cook for 1 minute.
    4. When water is boiling add the pasta and cook to al dente according to package instructions.
    5. Add the hummus, pasta cooking water and stir until smooth. Add the pasta and toss stir until combined.
    6. Serve and enjoy!
