Ingredients
 

  • 1 cup 125g All-purpose flour
  • 1 teaspoon Baking powder
  • ¾ cup 150g Sugar
  • ¼ teaspoon Salt
  • 1 teaspoon Cinnamon
  • 2 large eggs
  • ½ cup 115g Butter, melted
  • 1 teaspoon Vanilla extract
  • 4 Apples
  • 3 tablespoons Dark rum/apple juice
  • 2 tablespoons powdered sugar for dusting

Instructions
 

  • DIRECTIONS
    1. Preheat oven to 350F (175C). line a parchment paper on the bottom of a 8-inch (20cm) springform pan and grease the parchment.
    2. In a small bowl whisk flour, baking powder, salt and cinnamon. Set aside.
    3. Peel and dice the apples into 1-inch (2.5cm) pieces.
    4. In a large bowl, whisk eggs until light and fluffy, add sugar and whisk 1-2 minutes more, add vanilla extract, melted butter, rum/juice and whisk until combined. Gradually add flour mixture and mix until incorporated.
    5. Fold in the apples and transfer into the prepared pan.
    6. Bake for 35-40 minutes or until the cake is golden and a toothpick inserted into the center comes out clean. Let cool for 10 minutes, release from the pan and let cool to room temperature.
    7.Dust with powdered sugar and serve with ice cream (optional)

    I use whatever apples I have before they go bad, but Jonathan and McIntosh are great. But I have used Fuji, Gala, Granny Smith and those all have worked well. I would probably not use Red or Golden Delicious, don’t think they would hold up.

  5. I was wondering of flour measurement, it’s mentioned 1 cup = 125g… but the measure cups for 1 cup is 250g.. can you clarify. Specially it’s mentioned 3/4 cup = 150 g … how come 3/4 cup is more in grams than the 1 cup.

      Hi,
      First, remember that the measurements are in american cups.
      Second, each ingredient has a different volume. for example: 1 cup of sugar=200g and 1 cup of flour=125. while liquids are 240ml per cup.
      Anyway, I would always recommend using kitchen scale when baking.
