Preheat oven to 190C (375F). Prepare 2 baking trays lined with parchment paper and set aside.
In a pan, heat olive oil, add chopped onion and sauté until golden. Add garlic and cook for 1-2 minutes. Add ground beef and cook, breaking it apart until no longer pink.
Add tomato paste, salt, pepper, paprika, cumin, oregano and mix well. Turn the heat off, add chopped parsley and mix. Set aside to cool.
Open the puff pastry sheet, spread half of the meat mixture in the center, cut and old the pastry as shown in the video.
Repeat the process with the second pastry.
Brush with beaten egg and sprinkle some sesame seeds.
