DIRECTIONS
1. Make the sauce: in a small bowl whisk together soy sauce, honey/sugar, vinegar, mirin, sesame oil, water, garlic and ginger. Set aside.2. Season the chicken with salt and pepper. Heat oil in a large pan over medium heat, add the chicken, fry on one side for 6-7 minutes, until golden. Flip and fry for 4-5 minutes more.3. Pour in the sauce and simmer until sauce has thickened slightly and chicken is cooked through, about 3-5 minutes.4.
