This quick and easy Asian Chicken Broccoli Stir Fry is perfect for a busy weeknight dinner for the whole family. It has a delicious slightly spicy sauce, and it only takes less than 30 minutes to bring to the table a comforting meal.
Make the sauce: in a small bowl mix all sauce ingredients and set aside.
Cook the chicken: season the chicken with salt and pepper. Heat olive oil in a large pan or a wok, when hot, add chicken pieces and cook for about 5-6 minutes, or until cooked through. Remove the chicken from the pan and set aside.
To the same pan add ginger, garlic, mushrooms and broccoli. Cook for about 5 minutes.
Add the chicken, pour in the sauce and cook, stirring, for about 4-5 minutes.
Serve with brown rice or any other side.
Notes
If you want a thicker sauce, add a tablespoon of cornstarch to the bowl with the sauce before adding it to the pan.
You can also use ginger and garlic powder instead of fresh, but the flavor will be more subtle.
If you don't like spicy, you can skin the sriracha altogether.
