4-Ingredient Lotus Biscoff Cake Recipe
This lotus Biscoff cake is one of the easiest cakes I’ve ever made! All you need is 4 ingredients and 5 minutes of work. This cake is soft, moist and topped with delicious lotus Biscoff cookie butter spread. A perfect cake to make when you don’t have time.

Ingredients
- 350 g oz Lotus Biscoff cookies
- 1½ cups 360ml Milk
- 2½ teaspoons Baking powder
- 115 g 4oz Lotus Biscoff cookies butter
Instructions

- Preheat oven to 340F (170C). Line the bottom of a 7-inch (18cm) round cake pan with parchment paper and set aside.
- In a food processor or a Ziploc bag, crush the cookies into fine crumbs.
- Transfer to a large bowl, add baking powder, milk and mix until combined.
- Pour into prepared pan and bake for 35 minutes or until a toothpick inserted in the center comes out clean.
- Release from the pan and allow to cool.
- Place the cookie butter into a microwave safe bowl. Melt in the microwave for 20-30 seconds.
- Pour melted cookie butter over the cake and allow to set. Sprinkle some crushed Biscoff cookies to decorate if desired.
This is a genius recipe!! So quick and simple to make. It also tasted lovely- it was moist and spongy – really enjoyed it! Will deffo be making it again!
